Basic Beer Cheese Bread

Ingredients
Olive oil
1/2 cup finely chopped onion
1/4 tsp fresh ground pepper
1 garlic clove; minced
3 cups flour
3 T sugar
2 tsp baking powder
1 tsp salt
1 cup Monterey Jack Cheese
1 12oz bottle lager beer
2 T melted butter, divided

Directions
1. Preheat oven to 375
2. Heat oil in skillet; saute onion. Add pepper and garlic; saute 1 min
3. In mixing bowl combine flour, sugar, baking powder, and salt. Stir. Make well in center; add onion mixture, cheese, and beer stirring just until moist.
4. Spoon batter into a 9x5in baking pan coated with cooking spray. Drizzle 1T butter over batter
5. Bake for 35 min; drizzle with remaining 1T butter
6. Bake for another 20min

Pumpkin bread

Ingredients:
3 1/2 cups flour
1 T baking powder
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp allspice
1/2 cup egg substitute
1/2 cup canola oil
1/2 cup low fat buttermilk
2 large eggs
2/3 cup water
1 15oz can pumpkin
1/3 cup chopped pecans

Directions
1. Mix flour through allspice in a small bowl; set aside.
2. Mix egg substitute through eggs in a mixer until well blended; then add water and pumpkin.
3. Add flour mixture to egg mixture
4. Pour into 2 9x5in loaf pans; sprinkle with pecans (if desired)
5. Bake at 350 for 1 hr
